Cream of Tomato Soup

Phase: 1

1 tablespoon I cant believe its not butter
1 1/2 cup chopped onion
1 large clove crushed garlic
1/2 tsp salt
1/2 tsp dried rosemary
1/2 tsp dried basil
3 1/2 cups cooked tomatoes
3 tablespoons dry sherry
1/2 tsp honey (I used just a little equal)
4 oz low-fat cream cheese
freshly ground pepper

In a saucepan cook onions and garlic in the butter with salt until the onions are soft and translucent. Add herbs and pepper. Saute a few minutes more. Add tomatoes, sherry and honey. Cover and simmer 30 to 40 minutes. Cut the cream cheese into small cubes and add these to the hot soup. Continue cooking and stir until smooth (cheese takes awhile to melt).

Comments: I don't know if the honey is okay to use, but I made last night and just used a little Equal and it was really good.
