Black Bean Quesadillas

Phase: 2

1 ˝ tablespoons olive oil
1 small onion, chopped ˝ cup chopped cabbage 2 cups chopped spinach leaves, rinsed
3 tablespoons cilantro
1 15-ounce can nonfat black beans
salt to taste
˝ teaspoon chili powder
4 whole wheat tortillas
4 tablespoons grated Monterey Jack cheese (can use feta)
˝ avocado, cut into thin strips

Sauté onion, cabbage in oil for 3 minutes. Add spinach, cilantro, beans, salt, and chili powder. Cook until spinach wilts. Keep warm. Lightly brown tortillas in a frying pan in small amount of olive oil until crispy. Spoon in the filling and avocado strips and fold. Sprinkle tortillas with 1 tablespoon of cheese. Yield: 4 quesadillas.
