Phase: 1 Preheat Oven: 300
1 large can (16 oz.) chickpeas, rinsed and drained Sprinkle 1 or 2 teaspoons of seasoning over top and toss well.
Choice of Seasonings: soy or teriyaki sauce chili powder Italian seasoning mix herb mixes like Mrs. Dash garlic, onion, or curry powder cinnamon, nutmeg, ginger, allspice, etc.
Spread out on a cookie sheet that has been lined with parchment paper
Spray the chickpeas with your favorite brand of cooking spray and sprinkle more seasonings over the top. Bake at 300 degrees for about 1.5 hours, stirring occasionally until done. Try not to over cook them as they do get crunchier when they cool off. The time frame on this varies from one hour to two hours.... the instructions are an approximate!
For a savory taste, I have been using garlic powder, salt and Spanish smoked paprika that I had to order on-line from tienda.com but there are other vendors too. The smoked paprika is an amazing spice and gives them the taste of a smoked almond. (I put them in a bowl and coat with olive oil instead of the spray)
For a sweet taste: I add @ 1-2 TBLSP sesame oil (could use peanut or walnut) and 1 tablespoon tahini (sesame butter) but you could use peanut butter, splenda, and cinnamon to taste. mix up gently but well and then follow the directions. (although I have been cooking at 400 for about an hour) once they've cooled put them in a ziplock bag and coat again with splenda and cinnamon. The tahini gives it a little more of a nut taste and I believe it also adds a bit of protein.
