Phase: 1
For each crepe...
1 large egg, beaten
1 packet Splenda
1/4 teaspoon ground cinnamon
1 tsp. butter substitute (I use Smart Balance)
Heat butter substitute in pan. Beat remaining ingredients together. Cook as you would any other crepe.
I fill mine with fresh berries (for Phase 2!!!) and a bit of nonfat plain Greek yogurt.

Comments: Note that the berries are Phase 2 while the crepe itself is Phase 1; Phase 1 people could put peanut butter and cool whip inside!
