Asparagus Soup

Phase: 1

1 med. onion
2 tbsp. butter
2 tbsp. flour
1 lb. asparagus (cut into 2 in. pieces)
4 c. chicken broth
1/2 c. half and half

Sauté 1 onion in the butter. Add flour as a thickening agent after onions are soft. Add chicken broth and asparagus. Cook until asparagus is tender. Then put the contents into a blender and puree it. Put back into the pan and add 1/2 c. half and half. Heat through and serve.

I may try using canned asparagus to speed the process along just a little more.

Comments: I just had the most incredible soup for lunch today and the lady that brought it said it was only 3 grams of carbs. (I know we aren't really watching that, but most of the others in my lunch bunch are trying to ATKINS...boy, they don't get it!) Anyway...
