2 chicken breasts (cut into 1 inch pieces)
15 medium size shrimp(peeled)
1 Spanish onion (sliced then halved)
1 medium red pepper (cut into strips)
10 mushrooms (cut in halves)
1 head of broccoli (cut florets off stalk)
1 zucchini (1 inch slices)
1 yellow squash (1 inch slices)
Adobo (Spanish allspice
In large skillet coat bottom of skillet with olive oil. Just enough to coat. Heat skillet. Season chicken and shrimp with Adobo. Drop chicken into hot skillet and brown on both sides. Add shrimp and cook until shrimp Is pink. Add onions and peppers and stir. Cover skillet. Stir occasionally until onions and peppers start to soften. Add remaining veggies. Sprinkle more Adobo over top of added veggies, just enough to flavor. Stir, cover and reduce heat. Continue to cook for about 20 minutes stirring occasionally or until desired softness of veggies (I like mine a little firm).
