3 cups water 1 cups LF milk 2 -3 Tbl. Splenda 1 1/2 cups steel cut oatmeal
1 T. Smart Balance 1 T. canola oil
In large saucepan put the water, milk, and Splenda. Bring to a boil and stir in oatmeal. Reduce heat to low and simmer 20 min, stirring constantly, until very thick. Spoon into a 'Pam' sprayed Pyrex 7 x 11 pan and cool to room temp. Cover with Saran wrap and refrigerate at least 2 hrs. or overnight. Use a sharp knife and spatula to cut 8 triangles.
In skillet, put Smart Balance and canola oil. On medium heat cook oatmeal triangles to brown each side, about 2 min. per side, being careful not to burn. Serve with favorite oatmeal toppings: SF syrup or fruit compote or a dollop of LF whipped cream.

Comments: I feel the same....a prayer for Julia...I learned & enjoyed so much from her books...etc. hence my love of all things rich...Ha. here is a reallly good oatmeal recipe.
We serve this with canadian bacon & scrambled eggs and I’m going to try it as a side dish, flavored like barley.
