1 lb dry beans 1 to 2 T olive oil 1 tsp chopped garlic 1 large onion, chopped 1 large green pepper, chopped 1 small can chopped mild green chilis 1/2 cup celery, finely chopped (you can use the leafy parts) 3 oz Turkey bacon (optional), chopped 1/2 to 1 tsp ground cumin 1 tsp dried oregano 1/2 tsp hot sauce (I use Goya Salsa Picante - similar to Tabasco - has no sugar) Salt to taste (omit if turkey bacon is really salty) 1/4 teaspoon liquid smoke (optional)
Rinse dried beans then put in bowl and cover with water 1 inch higher than beans. Soak overnight. In the morning drain and rinse beans. Put in crock pot. Put olive oil in non-stick pan. Add garlic, onions, and turkey bacon, stir occasionally til soft, add green pepper, chilis, cook another 5-7 minutes. Add vegetables to crockpot - add spices except for salt and liquid smoke. Add water until it comes to just the top of the beans. Cook on high 4-6 hours (depends on how dry the beans are) or on low 6-8 hours.

Comments: When beans are soft you should switch to low - so use low or autoswitch if cooking all day. After the beans are soft - add liquid smoke and salt to taste.
You can adapt this recipe to any type of beans - the only trick is to not add anything with too much salt or acid until the beans are soft. So if you want to add tomatoes add them later.
You can make them spicier by using hot chilis (fresh ones chopped finely) or omit all the chilis and make them more like baked beans by adding brown sugar substitute, mustard and balsamic vinegar (after the beans are soft).
